Ingredients

2 cups gluten free rolled oats (can substitute quinoa flakes)
3 large overripe bananas, mashed
1/2 cup almond butter (can substitute any nut butter)
1/4 cup chocolate chips of choice (optional)

Instructions

  1. Preheat the oven to 350, then line a cookie sheet with some parchment paper. Set aside.
  2. Get out your favorite large mixing bowl, add all ingredients, and mix well until fully combined. Fold in chocolate chips (if you use them) last with a spatula.
  3. Lightly wet your hands to make it easier to handle the dough. Form 8 balls and place on the cookie sheet. Press into a cookie shape.
