Apple picking is the perfect way to spread the autumn cheer while grabbing a healthy snack. This spirited activity provides a great excuse to get outdoors and experience the fresh fall air. So, we’ve narrowed down a delicious recipe inspired by Plantifully Based to get you started. This irresistible vegan apple crumble will have you routinely returning to the orchard eager to make more.

Irresistible Vegan Apple Crumble!

Ingredients:

Filling

  • 4 medium apples of your picking peeled and chopped 
  • 2 tablespoons organic granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 ¼ tablespoon all purpose flour or gluten free 1:1 flour

Crumble Topping

  • ½ cup all purpose or gluten free 1:1 flour
  • 4 ½ tablespoons cold vegan butter
  • ¾ cup organic brown sugar or slightly less date paste
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup chopped walnuts or pecans (optional)

Instructions:

Preheat the oven to 350°F.

Peel (optional) and chop apples.

Add chopped apples to a small baking dish, approximately 7.5in x 6 in.

Sprinkle the apple-filling ingredients over the apples and toss everything until the apples are coated.

Next, add the crumble ingredients to a medium-sized mixing bowl. Use the side of a fork to cut the vegan butter into the flour to make crumble pieces. Be sure to mix all of the flour with the butter and make the crumble pieces as big or as small as you desire.

When you’ve finished assembling your crumble, use it to cover the apples.

Bake for 45 minutes. When the baking is finished, let the crumble sit for five minutes to cool off.

Serve the dish alone or with some creamy vegan ice cream and enjoy!
